I love anytime I have overripe bananas sitting in my fruit bowl because it’s the perfect excuse to make a fresh loaf of Banana Bread! This is my OG banana bread recipe I’ve been making for years. It’s so simple and you probably already have most of the ingredients at home!
Banana bread such a classic and just one of those recipes I know will always be a favourite of mine. Eating it fresh is good BUT my absolute favourite way to eat banana bread is toasted with butter! It is so incredible and if you aren’t already toasting your banana bread you need to start ASAP (I promise you’ll be obsessed!)
Ingredients needed:
- Ripe or overripe bananas
- Egg
- Almond milk
- Olive oil
- Honey
- Vanilla extract
- Self raising flour
- Cinnamon
- Salt
How to make:
Preheat oven to 180ºc (fan forced) and line a loaf tin.
In a bowl mash the bananas and add in egg, milk, olive oil, honey, vanilla extract and mix until combined. Mix in flour, cinnamon and salt.
Place mixture into the lined loaf tin. If you’re adding extra banana on top, slice in half (long ways) and add on top of the mixture. Bake for 45-50 minutes (or until cooked)
Let cool, slice up and enjoy!
Recipe substitutions:
- Instead of ALMOND MILK: You can use any milk of your choice
- Instead of OLIVE OIL: You can use melted coconut oil or butter
- Instead of HONEY: You can use any liquid sweetener of your choice
