It’s almost Easter which means it’s the perfect excuse to make these delicious Mini Egg Brownies!
These mini egg brownies are fudgy, gooey and loaded with chocolate…the perfect Easter dessert for all the family if you ask me!!
To make these you’ll only need simple ingredients and obviously lots of mini eggs!
Ingredient list:
- Eggs
- Applesauce
- Maple syrup
- Olive oil
- All purpose flour
- Cacao powder
- Baking powder
- Baking soda
- Dark choc chips
- Mini eggs
How to make Mini Egg Brownies:
Preheat your oven to 180ºc (fan forced) and line an 8×8 baking pan.
In a bowl combine eggs, applesauce, maple syrup and olive oil. Mix in flour, cacao powder, baking powder and baking soda.
Roughly chop up your mini eggs and fold into the mixture along with the dark choc chips.
Place batter into the lined baking pan and bake for 18 minutes or until cooked.
Let cool, slice up and enjoy!
I also drizzled on some extra melted chocolate but that’s totally optional 🙂
