Sticky Date Banana bread – An insanely delicious way to put some overripe bananas to good use. Sticky date pudding and banana bread are two of my favourite things so it’s safe to say I’m obsessed with this incredible dessert!
A fluffy banana bread loaf with soft, gooey dates served with an incredible 3 ingredient caramel sauce…does dessert get much better?!?!?
I asked over on my instagram what banana bread flavours I should make and soooo many people requested a sticky date banana bread! It was actually at the top of my list so I’m glad we are all on the same page hehe!
Ingredients needed:
banana bread
- pitted dates
- baking soda
- boiling water
- bananas
- olive oil
- maple syrup
- egg
- vanilla extract
- self raising flour
- pinch of salt
caramel sauce:
- canned coconut milk
- maple syrup
- brown sugar
How to make Sticky Date Banana Bread:
- SOAK DATES: In a heat proof bowl add the dates and baking soda. Cover with boiling water and leave to sit for 10 minutes, stirring occasionally.
- PREHEAT oven to 180°c (fan forced) and line a loaf tin.
- MAKE LOAF BATTER: To a bowl add the mashed bananas, olive oil, maple syrup, vanilla, egg and date mixture. Mix until combined. Add in the flour, salt and mix.
- BAKE: Transfer mixture to the loaf tin and bake for 45 minutes or until cooked.
- MAKE CARAMEL SAUCE: While the loaf is baking add the coconut milk, honey and brown sugar to a saucepan. Mix and bring to the boil. Let simmer 15 minutes, stirring frequently.
- SERVE: Once the banana bread has cooked, let cool and slice. Serve warm with the caramel sauce and enjoy!

- 1/3 cup olive oil or melted coconut oil/butter
- 1/3 cup maple syrup or liquid sweetener of choice
- 1 egg
- 1 tsp vanilla extract
- 2 cups self raising flour
- pinch of salt

- 1 cup canned coconut milk
- 1/3 cup maple syrup or honey
- 2 tbsp brown sugar or coconut sugar

- In a mixing bowl add the mashed bananas, olive oil, maple syrup, vanilla, egg and date mixture. Mix until combined.
- Add in the flour, salt and mix until combined. Transfer mixture to the loaf tin and bake for 45 minutes or until cooked.
- While the loaf is baking add the coconut milk, honey and brown sugar to a sauce pan. Mix and bring to the boil. Let simmer 15 minutes, stirring frequently.
