These blueberry pastries are the perfect dessert to make this winter. Filled with a delicious and juicy homemade blueberry jam, these pastries are so easy to make and even better served with a generous scoop of ice cream!
Ingredients needed:
- puff pastry
- homemade blueberry jam – recipe linked below
- fresh or frozen blueberries
- melted butter
- Optional – icing sugar to dust on top

How to make blueberry pastries:
- Preheat oven to 180°c (fan forced) and line a baking tray. Remove your pastry from the freezer and allow to sit for 10-15 minutes or until partially defrosted.
- Cut pastry into quarters. Spread the blueberry jam in the middle of each pastry square and add a few blueberries on top. Fold the corners of the pastry over the blueberries and brush with melted butter.
- Bake at 180°c for 30 minutes or until golden.
- Dust with icing sugar (optional) and serve warm with ice cream or just enjoy by themselves!
