- baby spinach
- cucumber
- avocado
- cannellini beans
- fresh parsely
- dill
- spring onion
dressing:
- olive oil
- dijon mustard
- lemon juice
- honey
- minced garlic
- salt/pepper

Ingredients
- 2 cups baby spinach chopped
- 1 cucumber diced
- 1 can (400g) cannellini beans rinsed and drained
- 1 avocado diced
- 1/4 cup fresh parsely finely chopped

- 2 spring onion finely chopped
dressing
- 1 1/2 tbsp olive oil
