If you love banana bread and berries you’re in for a treat with this incredible Berry Banana Bread. I’ve been loving making different flavours of banana bread recently. Banana bread is one of my favourite things EVER so I’m excited to experiment and try some delicious versions of the classic!
Ingredients needed:
berry compote:
- frozen mixed berries
- maple syrup
- lemon juice
banana bread:
- bananas
- egg
- maple syrup
- melted butter
- vanilla extract
- almond milk
- self raising flour
- cinnamon
- salt
How to make Berry Banana Bread:
First start by making the berry compote. Heat a saucepan to medium heat and add the frozen mixed berries, maple syrup and lemon juice. Mix and let simmer for 5 minutes, stirring occasionally. If needed, use a masher to crush the berries. Set aside in the fridge to cool completely.
Preheat oven to 180°c (fan forced) and line a loaf tin (21.5cmx13cmx12cm)
In a bowl add mashed banana, egg, maple syrup, vanilla extract, melted butter, almond milk and combine. Add in flour, cinnamon, salt and mix. Fold in the berry compote and transfer mixture to the lined loaf tin.
Bake for 50-55 minutes or until cooked.
Let cool, slice up and enjoy – store in the cupboard for 2-3 days!
Ingredient substitutions:
- Instead of maple syrup: you can use any liquid sweetener of your choice
- Instead of butter: you can use melted coconut oil or olive oil
- Instead of almond milk: you can use any milk of your choice
If you’re after a super delicious way to eat this I recommend toasting it and adding some ricotta and blueberry jam, it’s an incredibly tasty combo!
