Caramelised banana pancakes
A delicious caramelised pancake stack for breakfast is always a good idea!
Ingredients
For the pancakes
- 1/2 cup oats
- 1 tsp baking powder
- 1 tsp cinnamon
- 2 heaped tbsp greek yoghurt
- 1-2 tbsp maple syrup or sweetener of choice
- 1 egg
For the caramelised banana
- 1 banana sliced
- 1 tbsp coconut oil
- cinnamon

- greek yoghurt
- maple syrup
Instructions
- To make the pancake batter add all the ingredients onto a blender and blend until smooth. Add a few tbsp of mixture to the pan and cook each pancake for about 3 minutes per side or until golden
- Once the pancakes are cooked add the coconut oil along with banana slices and cinnamon. Cook for 3-4 minutes per side or until golden
- Add pancakes to a plate along with the caramelised banana, greek yoghurt and maple syrup
- Enjoy!
