Ingredients needed:
- Lebanese cucumber
- Canned chickpeas
- Cherry tomatoes
- Red onion
- Avocado
- Coriander
Dressing:
- Olive oil
- Salt
- Lemon juice
I have made this salad many times of the past few weeks and if you like feta I highly rcommnd add it in. It’s the perfect addition!

Chickpea salad
Ingredients
- 1 Lebanese cucumber diced
- 1 can (375g) chickpeas rinsed and drained
- 1 punnet of cherry tomatoes diced
- 1/2 a red onion diced
- 1 avocado diced
- coriander finely chopped
Dressing
- A drizzle of olive oil
- Salt
- Juice of half a lemon
Instructions
- Add everything to a salad bowl.
