You can never go wrong with an egg salad sandwich. It’s so easy to make, super creamy and comes together in minutes!
This egg salad sandwich is the perfect quick and delicious lunch. Ever since I was a kid egg salad sandwiches have been a favourite of mine, they’re just so good!
This recipe is slightly different to the classic egg salad as I don’t really like mayo. But you can always use mayo instead of greek yoghurt if you’d prefer!
Ingredients:
- hard boiled eggs
- avocado
- greek yoghurt
- dijon mustard
- minced garlic
- lemon juice
- fresh herbs
- salt/pepper
- bread
- lettuce
How to make hard boiled eggs:
Add the eggs to a saucepan and cover with water. Bring to the boil and reduce to a simmer. Let them simmer for 6 minutes then put the eggs in a bowl of ice cold water immediately after cooking. Leave for 15 minutes to cool then peel.
How to make an egg salad sandwich:
Making an egg salad sandwich is as simple as mashing together the boiled eggs, avocado, greek yoghurt, dijon mustard, minced garlic, lemon juice, fresh herbs salt and pepper.
Toast your bread and add the egg salad along with some lettuce.
Slice and enjoy!

Egg Salad Sandwich
Ingredients
- 2 hard boiled eggs
- 1/2 an avocado
- 1 tbsp greek yoghurt
- 1 tsp dijon mustard
- 1 tsp minced garlic
- dash of lemon juice
- fresh herbs
- salt and pepper
- 2 slices of bread toasted
- lettuce
Instructions
- In a bowl add the boiled eggs, avocado, greek yoghurt, dijon mustard, minced garlic, lemon juice, fresh herbs salt, pepper and mash together.
- Toast your bread and add the egg salad along with some lettuce, slice and enjoy!
