These healthier blueberry muffins are an easy and tasty snack recipe that you have to try! If I was going to eat a muffin, blueberry would definitely be one of my top picks…they’re just too good. These are great if you need something to take with you on the go or as a delicious school/work snack.

Ingredients needed:
- Almond milk (or milk of choice)
- Vanilla extract
- Eggs
- Maple syrup (or liquid sweetener of choice)
- Self raising flour
- Baking powder
- Blueberries (fresh or frozen)
Method:
Preheat oven to 180°c (fan forced)
Combine the milk, vanilla extract, eggs and maple syrup in a bowl. Mix in the flour and baking powder and fold in blueberries
Transfer mixture to a silicone muffin mould (or lined muffin pan) and bake for 25-30 minutes or until cooked
Let cool and enjoy!
