This peanut edamame salad is loaded with fresh veggies, edamame beans, the most delicious peanut dressing and you can’t forget the flaked almonds for some crunch!
The perfect flavour filled side dish, this peanut edamame salad will be your new salad obsession! I’ve definitely stepped up my salad game over the years and they are now something I love. I used to think salads had to be boring and bland but now I always make sure I add lots of veggies, fresh herbs, a delicious dressing and some nuts or seeds for that crunch!
Ingredients needed:
- cos lettuce
- cucumber
- capsicum
- edamame beans
- coriander
- shallots
- flaked almonds
- peanut butter
- soy sauce
- minced garlic
- honey
- lemon juice
- hot water
This peanut dressing is seriously amazing, I make it at least once a week! If you’re obsessed with peanut butter like me I just know you’ll love it.

Peanut Edamame Salad
Ingredients
- 1 head of cos lettuce shredded
- 1 cucumber diced
- 1 red capsicum diced
- 200g frozen edamame beans thawed
- shallots sliced
- coriander finely chopped
- 1/2 cup flaked almonds
peanut sauce
- 1/3 cup natural peanut butter
- 3 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp minced garlic
- 1 tbsp lemon juice
- 3-4 tbsp hot water add enough to get too your desired consistency
Instructions
- In a small bowl combine peanut butter, soy sauce, minced garlic, honey, lemon juice and hot water
- In a large salad bowl add the lettuce, cucumber, capsicum, edamame beans, shallots, coriander, peanut dressing, flaked almonds and mix until all combined.
- Serve in bowls and enjoy!
