This Peanut noodle stir fry is one of my go-to dinners. It’s so quick and easy to make and most importantly, incredibly delicious!!!
The best part about this recipe is the delicious peanut sauce!! It is packed with flavour and if you’re a peanut butter lover like myself I just know you’re going to love it.
For this recipe I usually just use a frozen veggie mix as it’s so much more convenient. However if you prefer you can also use fresh veggies!
Ingredients to make peanut noodle stir fry:
- Firm tofu
- Mixed frozen veggies
- Hokkien noodles
- Peanuts + fresh herbs to garnish
Peanut sauce:
- Natural peanut butter
- Minced garlic
- Soy sauce
- Honey
- Lemon juice
- Water
Method:
Slice up tofu and cook in a pan. Once cooked remove from the pan and add the veggies. Cook noodles as per directions.
Mix together peanut butter, garlic, soy sauce, honey, lemon juice and water to make the sauce.
Once veggies are cooked add in the tofu, noodles and peanut sauce
Serve in bowls with crushed peanuts and fresh herbs

Peanut sauce
- 1/2 cup natural peanut butter
- 1 tsp minced garlic
- 3 tbsp soy sauce
- 2 tbsp honey
- 1 tsp lemon juice
- 2-3 tbsp hot water add enough to get to your desired consistency
