Peanut tofu bowls – The perfect simple, easy and tasty vegetarian weeknight idea. Pan fried tofu, an array of veggies and loads of peanut sauce, it ticks all the right boxes!
These peanut tofu bowls are one of my all time favourite meals! I’ve said it before and I’ll say it again, this peanut sauce is ABSOLUTELY INCREDIBLE!!! I could seriously eat it everyday.
This meal is the perfect balanced weeknight dinner. In my meals I always try to include a source of protein, carbs and healthy fats to keep me full, energised and ensure I’m eating enough throughout the day!
Ingredients needed:
- firm tofu: The source of protein for this meal however you could also use chicken if you’d prefer.
- baby spinach
- tomato
- grated carrot
- cherry tomatoes
- edamame beans
- brown rice: I use the microwavable packets as it’s easier however you can cook your own rice if you’d prefer.
- shallots
- fresh herbs
Peanut sauce:
- natural peanut butter
- soy sauce
- honey: to make this recipe vegan you can substitute the honey with maple syrup or liquid sweetener of your choice.
- minced garlic
- lemon juice
- hot water
How to make peanut tofu bowls:
- COOK TOFU: Cut the tofu up into cubes and heat a pan to medium. Add the tofu and cook until golden.
- MAKE THE DRESSING: While the tofu is cooking, in a small bowl combine all ingredients for the peanut dressing. Add enough water to get to your desired consistency – I usually do a few tbsp.
- PREPARE THE VEGGIES: Defrost frozen edamame in the microwave, grate carrot, slice cherry tomatoes and finely slice the fresh herbs and shallots.
- COOK YOUR RICE: As I mentioned above I just use the microwavable packets for convenience.
- SERVE: In bowls add the veggies, rice, tofu and a good drizzle of the peanut sauce
Quantities:
The best thing about this meal is besides the peanut sauce the quantities are really flexible. You can’t go wrong so feel free to do as much as you think will keep you satisfied!

- 450g firm tofu
- baby spinach
- cherry tomatoes sliced
- 2 carrots grated
- 200g frozen edamame beans defrosted
- shallots finely sliced
- fresh herbs finely diced
- 2 250g microwavable brown rice packets or cook your own rice if preferred
Peanut sauce
- 1/3 cup natural peanut butter
- 3 tbsp soy sauce
- 2 tbsp honey
- 2 tsp minced garlic
- 1 tbsp lemon juice
- 3-4 tbsp hot water add enough to get too your desired consistency
