This Raspberry White Chocolate Loaf is absolutely incredible! It’s perfect for any occasion and is guaranteed to be a favourite. The combination of white chocolate and juicy raspberries is absoultely divine!

You cannot go wrong with this loaf, it’s a fabulous dessert or snack and perfect for anytime of year. It’s so simple to make and it’s also freezer friendly which is super convenient!

Ingredients needed:
- Applesauce
- Maple syrup
- Butter
- Eggs
- Almond milk
- Vanilla extract
- Self raising flour
- White chocolate chips or chunks
- Fresh raspberries or frozen – if using frozen toss them in 1/2tbsp plain flour, this prevents them from sinking.

How to make Raspberry White Chocolate Loaf:
- Preheat oven to 180°c (fan forced) and line a loaf tin (the size I used was 24cm x 13cm x 6.5cm)
- In a bowl combine applesauce, maple syrup, melted butter, eggs, almond milk and vanilla extract. Mix in the self raising flour and then gently fold in the white chocolate and raspberries.
- Transfer mixture to the lined loaf tin and bake for 40-45 minutes or until cooked.
- Let cool, slice up and enjoy!

Ingredient substitutions:
- Instead of applesauce: You can substitute for mashed banana
- Instead of maple syrup: You can use any liquid sweetener of your choice.
- Instead of butter: You can use melted coconut oil or olive oil. You can also use dairy free butter if needed.
- Instead of almond milk: You can use any milk of choice.

- 1/4 cup melted butter or melted coconut oil/olive oil
- 2 eggs
- 3/4 cup almond milk or milk of choice
- 1 tsp vanilla extract
