Ingredients needed:
- Self raising flour
- Cinnamon
- Eggs
- Maple syrup or sweetener of choice
- Almond milk or milk of choice
- Mixed frozen berries
How to make sheet pan pancakes:
- Preheat oven to 180°c and line a 19.5cm x 28.5cm* baking tray.
- To a bowl add the flour, cinnamon and mix. Add in the eggs, maple syrup, almond milk and mix until combined.
- Toss the berries in some flour and then fold into the mixture.
- Transfer the batter to the baking tray and bake for 20 minutes or until golden brown.
- Let cool and slice into 6 pieces.
I love to serve these with greek yoghurt and a drizzle of maple syrup. They are great to store in the freezer for when you need!
