This Vegemite scroll avocado toast takes the classic avocado toast to the next level!
Vegemite is definitely one of those foods where you either love it or hate it. I grew up absolutely HATING it but as I’ve gotten older I’ve grown to love it! Now Vegemite and avocado is one of my favourite flavour combos.
Avocado toast isn’t avocado toast without some eggs! Personally I love having poached eggs with my avo toast. I used to think it was really difficult to make poached eggs but it turns out it is actually quite simple!
How to make poached eggs:
- Add some water into a medium sized saucepan (fill it a few cm from the top) with a dash of vinegar.
- Bring the water to a boil and then gently place in the egg – I crack my egg into a ladle and then lower it into the water.
- Let the egg simmer for 3 minutes and then scoop out and place on some paper towel to get off any excess water. Repeat with the other egg.

Ingredients
- 1 Vegemite scroll toasted
- Vegemite
- avocado
- 2 poached eggs
- feta
- fresh herbs
- salt/pepper
Instructions
- To make poached eggs, add some water into a saucepan (fill it a few cm from the top) with a dash of vinegar, bring to the boil and then gently place in the egg. Let the egg simmer for 3 minutes and then scoop out and place on some paper towel to get off any excess water.
- Slice the Vegemite scroll in half and toast. Once the Vegemite scroll is toasted, add on Vegemite, avocado, poached eggs, feta, herbs and salt/pepper.Enjoy!
