- Coconut cream
- Minced garlic

- Paprika
- Pasta of choice
* To make PUMPKIN PUREE cut up your pumpkin, removing the skin and steam for 15 minutes, or until the pumpkin is soft. Use a handheld mix or blender to form a puree

Creamy Vegan Pumpkin Pasta
If you’re a pasta lover you need to try this creamy vegan pumpkin pasta. For this recipe you’ll only need a few simple ingredients and it’s so quick to make!
Ingredients
- 500g pumpkin puree *see notes on how to make this
- 350g pasta of choice uncooked
- 400 ml coconut cream
- 1 tbsp minced garlic
- 2 tsp paprika
- salt/pepper
Instructions
- Cook pasta as per directions (reserve some pasta water as you can add it to the sauce if it's too thick)
- In a saucepan, combine the pumpkin puree, coconut cream, garlic, paprika, salt and pepper.
- Add in the cooked pasta and mix
- Reduce the heat and let simmer for approximately 15 minutes, or until the sauce has thickened
- Serve in bowls and enjoy!
