Ingredients needed to make Roasted Potato Salad
- baby white potatoes
- olive oil
- salt
dressing:
- lebanese cucumber
- chives
- dill
- parsely
- greek yoghurt
- kewpie mayo
- dijon mustard
- seeded mustard
- minced garlic
- lemon juice
- salt
- pepper

How to make Roasted Potato Salad
- Preheat oven to 200°c and line a baking tray. Chop up the potatoes and add to a baking tray. Drizzle on olive oil and season with salt. Mix and bake for 40 minutes of until golden and crispy.

- While the potatoes are cooking, add all ingredients for the dressing into a large salad bowl and mix.

Roasted Potato Salad
Ingredients
- 1 kg baby white potatoes chopped
- drizzle of olive oil
- pinch of salt
Dressing
- 1 lebanese cucumber deseeded & finely diced
- 1/4 cup chives finely chopped
- 1/4 cup dill finely chopped
- 1/4 cup parsely finely chopped
- 1/4 cup greek yoghurt
- 1/2 cup kewpie mayo
- 1 tsp dijon mustard
- 1 tsp seeded mustard
- 1 tsp minced garlic
- juice of 1/2 a lemon
- salt/pepper
Instructions
